(Quadrup!ex)实验磨法AACC 39-70A小麦硬度近红外反射法AACC 55-30小麦硬度粒度指数法AACC 55-31 小麦硬度小麦籽粒单颗粒特性测定3 设备3.1 实验清理设备3. 1 . 1 实验除杂机Brabender Labofix实验除杂机、Tripette& renaud NSP实验除杂机或其他能将小麦样品中大杂、小杂和轻杂清理干净的机械设备。3.1.2 清理筛采用由两层或多层筛面组成的筛选器。筛孔孔径取决于所清理的小麦籽粒的大小。第一层筛面的筛孔要大到足以使小麦籽粒全部通过(
5、4.5mr丑),而比小麦籽粒大的杂质留存在筛面上。底层筛面的筛孔要小到足以使小麦籽粒留存在筛面上(2mmX20mm),而允许小杂质和没有研磨价值的小麦粒以及破碎的麦粒通过。3.1.3 实验打麦机(任选)任何适合的打麦机都可以使用,但要求打麦作用不能太剧烈,以免损伤小麦籽粒。3.2 润麦设备可选用旋转圆筒润麦器或洗麦机,使小麦样品中的水分均匀分布。也可使用密闭容器润麦。3.3 实验磨按NYIT 1094.2-2006中3.1、NY/T1094.3一2006中第3章、NYIT 1094.4-2006第3章、NY IT 1094.5-2006中4.1的规定。1 NY/T 1094.1-2006 4
6、打款机(任选)当使用较短的皮磨系统达到商业出粉率为目标时,可使用实验室用打款机。打款机对于软麦款皮清理是特别有用的。4.1 其他用具天平(称量3000g:!: 1 g),密闭装样容器,铲子,装料盘,刷子及粉刀。5 操作步骤5.1 清理与打麦根据所需净麦样品质量,称取足够的毛麦,送人清杂机和打麦机。记录清理和打麦过程中的损失。记录以未清理毛麦为基础的清理损失以及清理后以净麦为基础的打麦损失。5.2 净麦水分含量测定按GB/T5497规定执行。5.3 小麦硬度的测定按AACC55-30、AACC55-31或AACC39-70A规定执行。5.4 润麦5.4.1 润麦加水量根据小麦的硬度选择合适的润麦
7、水分。软麦水分调节到13%14%,硬麦水分调节到15% 16%。5.4.2 润麦时间a) 一次润麦润麦水分提高不超过4%,宜采用一次加水到润麦要求水分。硬麦润麦时间为16h24 h;中等硬度小麦的润麦时间为12h18h;软麦润麦时间为10h16 h。保证足够的润麦时间可使胚乳各部分的水分达到平衡,从而得到一致性的实验结果。b) 二次润麦润麦水分提高超过4%,宜采用二次加水到润麦要求水分。根据小麦的原始水分,先计算添加适量的水,润麦48h以上,使小麦的水分达到13.5%。然后在制粉前18h再加适量的水润麦,使小麦达到要求的水分和润麦时间。在皮磨上研磨时,如果款皮太干,在磨粉前加0.5%左右(用喷
8、雾器)的润麦水分进行润麦。硬麦在磨粉前约3到Omi由1让lll1-卢、-、.-5.4.3 润麦称量小麦,然后按附录A中A.3公式或按表A.1.1 A. l. 3查表计算出需要的加水量。样品在密闭容器里要逐步加入润麦水。密闭容器要大到摇动时能让小麦自由活动,加水后立即充分摇动容器以便使小麦与水均匀混合。在要求的润麦时间内,让小麦静置于密闭容器内,并不时地摇动。5.5磨粉可按小麦类型和所使用的实验磨选择制粉方法。并应预先测定合适的喂料速度,并且在整个实验过程中保持不变。2 A.l 水分调节表附录A(规范性附录)水分调节表NY /T 1094. 1-2006 表中最左边的一行,为样品的原始水分含量。
9、右边的数据,是将小麦水分提高到表头指出的水分含量时,每1000g小麦所需增加的水的毫升数。如:样品的水分为11.3%,要求调节到15.0%。先从最左边一行中查找原始水分11.3%,然后向右边一行中在表头列示为15.0%项下即可找到需要加入水的数量(1000g小麦加人43.4mL水)。借助于适当的倍数因子,本表适用于任何质量的样品。例如,若600g小麦,其水分含量为11.3%,欲调节到15.0%,将43.4(1000g小麦所需要的毫升数)乘以0.6,得到26.0mL;如果样品质量为2500g,则按43.4乘以2.5,得到应添加的水量为108.5mL。A.2 公式计算加水量润麦加水量以V计,单位用
