The temperature controlling device or thermostat(when electronic) shall be calibrated to maintain the surfacetemperature tolerance on each section not more than 25F(13.9C) except for those areas adjacent to the splash guards,t

44、he surface temperature tolerance shall not vary more than30F (16.7C).7.6 Heating Methods:7.6.1 Electric GriddlesElectric griddles may have heatingelements arranged so that different areas of the griddle may becontrolled independently. A minimum of one heating elementmay be furnished for each linear

45、foot (305 mm) of the griddleplate. The elements may be the enclosed coil type and may beattached securely to the bottom of the griddle plate. The bottomof the heating elements may be enclosed by a heat insulatingpad. Both methods shall be designed to isolate the heatingelements by reducing the amoun

Heatingelements may be accessible readily for repair or replacement. The terminals of the heating elements shall project a sufficientdistance to permit easy

47、 access to the connections. Alternatemethods of heating the cooking surface may employ steam orinduction heating. All internal wiring shall be free of stress ortension and, where required, shall be coated with high-heatresistant insulation to resist water or grease.7.6.2 Gas GriddlesGas griddles may

48、 have burners ar-ranged so that different areas of the griddle may be controlledindependently. A minimum of one burner may be furnished foreach linear foot (305 mm) of the griddle plate. The bottom ofthe combustion chamber may be enclosed by a heat insulatingpad. Both methods shall be designed to is

49、olate the burner byreducing the amount of heat radiated downwards. When aninsulating pad is used, it shall be fire resistant and suitable forthe temperatures generated in this area. Burners may beaccessible readily for repair or replacement. The orifices of theburners shall have easy access for cleaning. Alternate methodsof heating the cooking surface may employ steam heating. Allinternal wiring shall be free of stress or tension and, whereF1919 143required, shall be coated with high-heat resistant i
