Some researchers think they have the answer, and it comes down to the structure of the food, not its chemical composition a finding that could help rid some processed foods of chemical preservatives. Cre

、am and butter contain pretty much the same substances, so why cream should sour much faster has been a mystery. Both are emulsions tiny globules (小球) of one liquid evenly distributed throughout another. The difference lies in whats in the globules and whats in the surrounding liquid, says Brocklehur

、st, who led the investigation. In cream, fatty globules drift about in a sea of water. In butter, globules of a watery solution are locked away in a sea of fat. The bacteria which make the food go bad prefer to live in the watery regions of the mixture. “This means that in cream, the bacteria are fr

、ee to grow throughout the mixture,“ he says. When the situation is reversed, the bacteria are locked away in compartments (密封仓) buried deep in the sea of fat. Trapped in this way, individual colonies cannot spread and rapidly run out of nutrients. They also slowly poison themselves with their waste

、products. “In butter, you get a serf-limiting system which stops the bacteria growing,“ says Brocklehurst. The researchers are already working with food companies keen to see ff their products can be made resistant to bacterial attack through alterations to the foods structure. Brocklehurst believes

、 it will be possible to make the emulsions used in salad cream, for instance, more like that in butter. The key will be to do this while keeping the salad cream liquid and not turning it into a solid lump. (分数:177.50)(1).The significance of Broaklehursts research is that _.(分数:35.50)A.it suggested a

Kill the fool! Murder the referee (裁判) !“ These are common remarks one may hear at various sporting

、 events. At the time they are made, they may seem innocent enough. But lets not kid ourselves. They have been known to influence behavior in such a way as to lead to real bloodshed. Volumes have been written about the way words affect us. It has been shown that words having certain connotations (含义)

、 may cause us to react in ways quite foreign to what we consider to be our usual humanistic behavior. I see the term “opponent“ as one of those words. Perhaps the time has come to delete it from sports terms. The dictionary meaning of the term “opponent“ is “adversary“; “enemy“; “one who opposes you

、r interests.“ Thus, when a player meets an opponent, he or she may tend to treat that opponent as an enemy. At such times, winning may dominate ones intellect, and every action, no matter how gross, may be considered justifiable. 1 recall an incident in a handball game when a referee refused a playe

、rs request for a time out for a glove change because he did not consider them wet enough. The player proceeded to rub his gloves across his wet T-shirt and then exclaimed, “Are they wet enough now?“ In the heat of battle, players have been observed to throw themselves across the court without consid

、ering the consequences that such a move might have on anyone in their way. I have also witnessed a player reacting to his opponents intentional and illegal blocking by deliberately hitting him with the ball as hard as he could during the course of play. Off the court, they are good friends. Does tha

、t make any sense? It certainly gives proof of a court attitude which departs from normal behavior. Therefore, I believe it is time we elevated (提升) the game to the level where it belongs, thereby setting an example to the rest of the sporting world. Replacing the term “opponent“ with “associate“ cou

、ld be an ideal way to start. The dictionary meaning of the term “associate“ is “colleague“; “friend“; “companion.“ Reflect a moment! You may soon see and possibly feel the difference in your reaction to the term “associate“ rather than “opponent.“ (分数:177.50)(1).Which of the following statements best expresses the authors view?(分数:35.50)A.Aggressive behavior in sports can have serious consequences.B.The words people use can influence their behavior.C.Unpleasant
