SCOPE1.1 Scope . This commercial item description (CID) coverspre

2、ssureless steam cookers.1.2 Intended use . The steam cooker is intended for use inNavy shipboard galleys.2. CLASSIFICATION2.1 Classification . The steam cooker shall conform to thefollowing types:Type 1: Vacuum steamerType 2: Pressureless steamerBeneficial comments (recommendations, additions, delet

The steam cookers shallconsist of a water tight insulated cooking cavity. Cookingshall be accomplished by direct a

5、ction of steam asspecified under type designation (see 2.1). The steamershall have a manual valve that drains water into aremovable 4 inch deep pan located under the steamer, orequipped with a suitable connection to the drain. Allconnections shall be designed so that the unit may beconnected while m

6、aintaining a flush rear or side surface.Each steamer type shall be fabricated from stainless steelwith corrosion-resistant hardware and fittings inaccordance with the manufacturers standard practice. Allthreaded parts shall conform to ANSI B1.1.Each cooker type shall provide the following features:

7、Single cooking cavity Switch that cuts electrical power to the heater whenwater level is low Rail guides capable of being removed or adjustedwithout the use of tools. Control panel shall be accessible for serviceability A 60 minute(minimum) timer which will give an audiblesignal at the end of a cook

8、ing cycle3.2 Dimensions . Each steamer type shall have the followingmaximum outside dimensions: 24 inches wide by 31 inchesdeep by 33 1/2 inches high (excluding legs).3.3 Stackability. Each steamer type unit shall have thecapability to be stacked one upon another without bindingor wobbling, or use a

The cooking chamber shall becapable of generating steam within 15 minutes or less afterturn on. The steamer shall use a maximum o

10、f one gallon ofwater per hour. The steam cookers shall be capable ofcooking at temperatures between 150 O F 212 O F for type 1,and 212 O F for type 2 when tested as specified in 5.2.1.3.5 Steamer capacity . Each cooking compartment shall havethe capacity to accommodate the following pan sizes andqua

11、ntities: six steam table pans(12 inches by 20 inches by2-1/2 inches high), or four steam table pans(12 inches by20 inches by 4 inches high), or three steam table pans (12inches by 20 inches by 6 inches high). Pans shall notcontact the interior oven wall surfaces.3.6 Doors . Steamer door shall be sta

12、inless steel, withreplaceable gasket, and provision made to preventcondensate from dripping on the deck. The door shall notrequire more than 16 lbs of force to unlatch duringoperation, when tested as specified in 5.2.2.3.7 Door latch . Steamer door shall be equippedwith a secondary exterior mechanic

13、al latch (in addition tothe main door latch) that shall allow the door to openapproximately 1/2 inch to release trapped steam insidecooking cavity. Each door shall be provided with a hold-open latch which holds the door open in a 90 degree, orgreater open position.3.8 Mounting . The steamer unit sha

14、ll be provided with fourtype 300 series stainless steel round legs, each a minimum1 inch in diameter, 4 inches in length, for securing theunit to a dresser, countertop, or stand.3.9 Inclined operation and structural integrity (shipboardrequirement, see 7.2) . The steamers shall operatesatisfactorily

15、, with no leakage of fluid or product, wheninclined at an 15 degrees each side of the vertical in eachof two vertical planes at right angles to each other, whenused for surface ships. For submarine use, the angle ofinclination shall be 30 degrees. During testing, the doorshall remain closed to preve

Steamer shall be capableof withstanding ships vibration in accordance with MIL-STD

17、-167/1, type 1 environmental vibration withoutmalfunction.3.11 Temperature control . Each steamer shall be equippedwith an automatic, or adjustable thermostat to providetemperature control of the cooking compartment. Thethermostat shall be capable of maintaining temperaturerange of 150 O F to 212 O

18、F for type 1, and 212 O F for type 2.3.12 Heating elements . All heating elements shall besealed and protected to preclude damage by moisture.3.13 Surface temperature . Each steamer unit shall becapable of operating at 212 O F with no external contactsurface exceeding a temperature of 140 O F.3.14 E

19、lectrical requirements . Unless otherwise specified,steamers for shipboard use shall be compatible with 440VAC, 60 Hz, 3 phase, 3-wire, underground of 115 VAC, 60Hz, single phase, alternating current systems forshipboard, as specified in MIL-STD-1399/300.3.15 Electrical wiring . Electrical wiring sh

20、all bearranged, supported and marked to allow identification withprovided wiring diagram for each unit located on accesspanel.3.16 Controls . All controls, switches, and indicatorlights shall be readily accessible, easily operable, andshall be located in a waterproof control panel on the frontof the

21、 unit.3.17 Accessibility . The access panel and components foreach unit shall be physically and visually accessible foroperation and for normal maintenance with tools, testequipment, and replacement parts. No special tools shall berequired for access or parts replacement.3.18 Physical size limitatio

22、ns . 23、l plates . The unit shall be provided with a datanameplate and an instruction plate, both attached to thefront doors of the unit. They shall be readily visibleduring normal operating use and shall not adversely affectthe life and utility of the unit.3.19.1 Data nameplate . The data nameplate shall c

24、ontainthe manufacturers name, model, serial number, datemanufactured, and other information needed to uniquelyidentify the unit.3.19.2 Instruction plate, and operation manual . The unitshall be provided with an instruction plate affixed to thefront door, and an operations manual for start-up,operati

25、on, shut down, and cleaning.3.20 High voltage labels . A label reading “Danger-HighVoltage” shall be affixed to the outer case assembly, on oradjacent to each service access cover near one of thefasteners securing the cover. In addition, a warning labelin accordance with UL 969 shall be placed near

26、the highvoltage components inside the equipment. This label shallinclude, but not be limited to the following texts: Danger-High Voltage Power supply must be disconnected before servicing Access covers must be in place before use Service should be performed by authorized personnelonly3.21 Standard c

27、ompliance . The unit shall be in accordancewith and certified to meet the applicable requirements ofNSF 4 and UL 197.3.22 Workmanship . The finished units shall be free ofcracks, dents, or scratches. All burrs, slivers, splinters,sharp edges, dirt, grease, and foreign matter shall beremoved.Provided

Products manufactured to metricdimensions will be considered on an equal basis with thosemanufactured using-pound units, provided they fall withinthe tolerances specified using

29、conversion tables containedin the latest revision of IEEE/ASTM SI 10, and all otherrequirements of this document are met. If a product ismanufactured to metric dimensions and those dimensionsexceed the tolerances specified in the inch-pound units, arequest should be made to the contracting officer t

30、odetermine if the product is acceptable. The contractingofficer has the option of accepting or rejecting theproduct.4. REGULATORY REQUIREMENT4.1 Contractor recovered material . The offeror/contractoris encouraged to use recovered materials to maximum extentpracticable, in accordance with paragraph 2

31、3.403 of theFederal Acquisition Regulation (FAR).5. QUALITY ASSURANCE PROVISIONS5.1 Product conformance . The product provided shall meetsalient characteristics of this CID, conform to theproducers own drawings, specifications, standards, andquality assurance practices, and/or be the same producttha

32、t has successfully been delivered to the Government forshipboard use on a previous procurement. The Governmentreserves the right to require proof of such compliance toall salient characteristics.5.2 TESTING5.2.1 Steaming mode performance test. Prior to testing,the steamer cooking cavity shall be pre

33、heated for 15minutes. With the steamer in the steam mode, two-dozenlarge eggs shall be placed in a 2 inch perforated pan, andloaded into the cooking cavity and held for 13 minutes.Three eggs selected at random shall be opened with in oneminute to determine compliance with 3.4. All sample eggsshall e

34、xhibit a solid yoke.5.2.2 Door pull test . 35、ng . Preservation, packing, and marking shallbe as specified in the contract or purchase order.7. NOTES7.1 Operation and repair manual, inspection and testingreports .
