33、 to margarine, a plastic or fluid emulsion of water in fat andlor oil. Margarine shall contain at least 80% fat and added vitamins A and D. The edible fatoil may be of vegetable, animal or marine origin except milk fat, and may have been hydrogenated, fractionated or modified. Margarine is intended

34、for substantially the same uses as butter. This specification is intended to be used by food services in procurement of food. This specification does not apply to special margarines, such as calorie-reduced, bakers or whipped margarine. The test methods referred to in this specification may require

35、the use of materials and/or equipment that could be hazardous. This document does not purport to address all the safety aspects associated with its use. 46、and classes (spreadability) and shall be salted or unsalted, as specified (par. 8.1): rms Type 1 - Polyunsaturated, all-vegetable margarine Class A - Regular ail-vegetable margarine that has at least 25% of the total fate as cis-methylene interrupted, polyunsaturated fatty acids and not more than 25

47、% of the total fat as saturated fatty acids. Class B - Soft, all-vegetable margarine, that meets the requirements of Class A except that polyunsaturated fatty acids should exceed the saturated fatty acids by 50%. Type 2 - All-vegetable oil margarine. Type 3 - Any edible fatoil margarine. Classes (ac

48、cording to spreadability) Class A - Regular, spreadable at 12% Class B - Soft. spreadable at 4C. GENERAL REQUIREMENTS Margarine and its ingredients shall comply with the relevant portions of the publications listed in par. 2.1.1, 2.1.2 and 2.1.3. Margarine shall be prepared from fully refined oils or fats, water in combination with dried milk products, and other optional ingredients as set forth in the Food and Drug Regulations.
