SCOPE1.1 Scope . This commercial item descriptio

The combination ovens shallconsist of a water tight insulated oven cavity, sealingcenter split doors, blower, air heater(s), steam generator,single exit discharge drain connection, hose washablecooking cavity with center
6、drain; over pressure and underpressure venting, as required. Each oven compartment, whenused in the steaming or combination steaming convectionmode, shall use five gallons of water per hour or less, andbe capable of operating independently with separatecontrols. All four oven types shall be fabricat
7、ed fromstainless steel with corrosion-resistant hardware andfittings in accordance with the manufacturers standardpractice. All threaded parts shall conform to ANSI B1.1.The type 1 oven shall provide the following features: Single oven cavity Adjustable solid center split doors with verticalhandles
8、and interlock switch to shut off the fan,and heating elements when door is opened, except incool down mode Five equally spaced removable stainless steel wireracks, capable of supporting a load of 20 pounds persquare foot each Rail guides capable of being removed withoutthe use of tools. The oven temperature,s
15、tarting from ambient air temperature of 70 O F, shall heat to300 O F, 350 O F and 400 O F for hot air mode, when tested asspecified in 5.2.1.3.3.2 Steam mode performance . Each oven compartment shallbe capable of performing in the steam mode, when tested asspecified in 5.2.2 and 5.2.3.3.4 Oven capac
16、ity . Each oven section shall have thecapacity to accommodate the following pan sizes andquantities: ten steam table pans(12 inches by 20 inches by2-1/2 inches high), or five baking pans(18 inches by 26inches by 1 inch high), or two roasting pans (24 inches by18 inches by 4-19/32 inches high). Pans
17、shall not contactthe interior oven wall surfaces.3.5 Doors . Oven doors shall be stainless steel. The ovendoor(s) shall be insulated, with replaceable gaskets, andprovision made to prevent condensate from dripping on thedeck. The doors shall not require more than 16 lbs of forceto unlatch during ope
18、ration, when tested as specified in5.2.4.3.6 Types 3 and 4 doors . The doors for Types 3 and 4 ovensshall contain a clear tempered glass window that shallconform to ANSI Z97.1. The window shall be centered in thedoor a maximum size of 6 inches by 12 inches. The gasketshall meet NFS International Sta
19、ndard 2 for materials usedin the food contact area. A shield shall be provided on theoutside of the glass to prevent hand contact.3.7 Oven door latch . Oven doors shall be equipped withsecondary exterior mechanical latches (in addition to themain door latches). Each side-opening-type door shall bepr
20、ovided with a hold-open latch which holds the doors in awide open position flush with the oven interiorside walls.3.8 Mounting . The type 1 oven shall be provided with fourstainless steel legs not less than 18 inches high suitablefor attachment to the deck. The type 2 oven shall beprovided with eith
21、er a separate oven base or four legs6 61/2 inch long for bolting or welding to the deck. 22、peration and structural integrity (shipboardrequirement, see 7.2) . The oven shall operatesatisfactorily, in accordance with the requirements of thisCID (such as the door remaining closed to prevent the lossof contents), when test-operated for 30 seconds inclined atan angle of 15 degrees each side o
23、f the vertical, in each oftwo vertical planes at right angles to each other. The ovenshall not deviate or rack from perpendicularity to the deckby more than 1/8 inch when the deck is inclined at an angleof 15 O degrees.3.10 Environmental suitability . Combination ovens shallbe capable of withstandin
24、g ships vibration in accordancewith MIL-STD-167/1, type 1 environmental vibration withoutmalfunction.3.11 Temperature control . Each oven shall be equipped withan automatic adjustable thermostat to provide automaticheat control of the oven compartment and permit cookingoperations to be accomplished
25、by maintained temperature.The thermostat shall be capable of maintaining any oventemperature within the range of 150 O F to at least 450 O F,plus or minus 10 O F of the temperature setting.3.12 Heating units . The oven shall be provided withheating elements located to provide even heat distributiont
26、hroughout the oven compartment on all operating modes. Theheating elements shall be fully protected from the pans andfan blade, and removable from the oven front.3.13 Heating elements . The ends of the heating elementsshall be sealed and protected to preclude the entrance ofmoisture. Heating element
27、s shall be removable from withinthe oven cavity. Heating element leads requiringdisconnection for removal of the elements shall beaccessible from inside the cavity.3.14 Surface temperature . Each oven unit shall be capableof operating up to 450 O F with no external contact surfaceexceeding a tempera

The units shalloperate on 440 VAC, 60 Hz, three-phase power, three wirewith 120 volt contr
29、ols as defined in MIL-STD-1399, section300, and shall have provisions for making direct(hardwired) connections for electrical power (2 conductors)and for equipment grounding (1 conductor). All outermostmetallic surfaces shall be grounded via the equipmentgrounding connection. The grounding resistanc
30、e between anyexposed metallic surfaces and the common ground point shallbe not greater than 0.1 ohm. Electrical components, otherthan hermetically sealed motor, shall be provided inaccordance with NEMA 250, type 13 or equivalent enclosureprotection. Metal parts of electrical components andenclosures
31、 shall be inherently corrosion resistant or shallbe treated and processed for corrosion resistance inaccordance with IEEE Standard 45.3.16 Electromagnetic compatibility . When required, eachunit type shall be designed for electromagneticcompatibility in accordance with the requirements of MIL-STD-46
32、1, class A4 for surface ships.3.17 Electrical wiring . Electrical wiring shall bearranged, supported and marked to allow identification withprovided wiring diagram for each unit.3.18 Controls . All controls, switches, and indicatorlights shall be readily accessible and easily operable forsteam, hot
33、air and combination modes; and shall be locatedin a waterproof control panel at the front right side ofthe door.3.19 Accessibility . The unit shall be physically andvisually accessible (including motor assembly, fans,heating elements, steam generator, and controls) from thefront of the oven for oper
34、ation and for normal maintenancewith tools, test equipment, and replacement parts. Nospecial tools shall be required for access or partsreplacement.3.20 Water and electrical connections . Each unit shall beequipped with a water and electrical hook-up connectionlocated at the front of the unit. The w
35、ater inlet shall beclearly marked with water pressure requirements. The
36、units shall pass orshall disassemble without any need of cutting and/ormodification, so that it can pass through a shipboardaccess measuring 26 inches wide by 66 inches high with 8inch radius corners.3.22 Label plates . The unit shall be provided with a datanameplate and an instruction plate, both a
37、ttached to thefront doors of the unit. They shall be readily visibleduring normal operating use and shall not adversely affectthe life and utility of the unit.3.23 Data nameplate . The data nameplate shall contain themanufacturers name, model, serial number, datemanufactured, and other information n
38、eeded to uniquelyidentify the unit.3.24 Instruction plate, and operation manual . The unitshall be provided with an instruction plate affixed to theright hand door, and an operations manual for start-up,operation, shut down, and cleaning (procedures fordeliming).3.25 Hot spot labels . Each unit shal
39、l be clearly markedwith labels indicating hot external spots(see 3.14). Labelsshall be capable of withstanding surface temperatures,cleaning products, and the cleaning process withoutdegradation.3.26 High voltage labels . A label reading “Danger-HighVoltage” shall be affixed to the outer case assemb
40、ly, on oradjacent to each service access cover near one of thefasteners securing the cover. In addition, a warning labelin accordance with UL 969 shall be placed near the highvoltage components inside the equipment. This label shallinclude, but not be limited to the following texts: Danger-High Volt

The unit sha
42、ll be in accordancewith and certified to meet the applicable requirements ofNSF 4 and UL 197.3.28 Workmanship . The finished units shall be free ofcracks, dents, or deep scratches. All burrs, slivers,splinters, sharp edges, dirt, grease, and foreign mattershall be removed in both easy access areas a
43、nd where accesspanels are removed.4. REGULATORY REQUIREMENT4.1 Contractor recovered material . The offeror/contractoris encouraged to use recovered materials to maximum extentpracticable, in accordance with paragraph 23.403 of theFederal Acquisition Regulation (FAR).5. QUALITY ASSURANCE PROVISIONS5.
44、1 Product conformance . The product provided shall meetsalient characteristics of this CID, conform to theproducers own drawings, specifications, standards, andquality assurance practices, and/or be the same productthat has successfully been delivered to the Government forshipboard use on a previous
45、 procurement. The Governmentreserves the right to require proof of such compliance toall salient characteristics.5.2 TESTING5.2.1 Convection mode performance test . The oven cavityshall heat to 300 O F in 10 minutes or less at an ambienttemperature of 70 O F plus or minus 5 O F. The oven shall be se
46、tat successively higher temperatures of 350 O F and 400 O F, theoven compartment temperature shall be measured. Thetemperature shall not vary more than plus or minus 10 O Ffrom the oven set temperature. The oven temperatures shallbe recorded to determine compliance with 3.3.1.5.2.2 Steam mode perfor
47、mance test. With the oven in thesteam mode four-dozen large eggs shall be loaded in theoven cavity and held for 13 minutes. Three eggs selected atrandom shall be opened with in one minute to determinecompliance with 3.3.2. All sample eggs shall exhibit asolid yoke. When a double-stacked oven is test

Fifty pounds of watershall be equally divided into six, four inch deep steamtable pans
49、at a temperature of 70 O F plus or minus 5 O F. Thepans shall be placed in the oven, the oven turned on to thesteam mode. The water shall reach 200 O F in one hour or lessto determine compliance with 3.3.2.5.2.4 Door pull test . The oven door shall not require morethan 16 pounds of force to open when operating at 450 O F todetermine co
