The standards that it develops and offers as Nationaf Standards of Canada conform to the criteria and procedures established for this purpose by the Standards Council of Canada. In addition to standards it publishe

4、s M national standards, the CCSB produces standards and specifications ta meet particular needs, in response to requests from a variety of sources in both the public and private sectors. CGSB standards and specifications, and national standards developed by the CGSB, are developed in conformance wit

5、h the policies described in the Policy Manual for the Development and Maintenance of Standards by CGSB. CGSB specifications are developed to state the particular requirements of a government or an industry for a material, a product, or a service. A specification also states the procedures to determi

6、ne if the requirements have been met. Unlike a CGSB standard, a CCSB specification may lack any one or any combination of the followin factors: broad application, committee balance, representation of d vital interests or consensus approval. CGSB specifications are sub t to review and revision at any

7、 time, so ab ta ensure that they gp abreast of technological progress. Suggestions for their improvement, which are always welcome, should be brought to the notice of the committee concerned. Changes to specifications are issued either as separate amendment sheets or in new editions of specification

8、s. An up-to-date listing of CGSB specifications, including details on latest issues and amendments, and ordering instructions, will be found $ the Catalogue of Standayis and Qualiped Products Lists which is published annually and IS available without charge upon request. Although the intended primar

9、y appliation of this specification is stated in its Scope, it is important to note that it remains the responsibility of. the users of the specification to judge its suitability for their particular purpose. 34、ses. The organs shall be delivered fresh or frozen. The tongues may also be supplied cured. This specification is intended to be used by food services in procurement of food. Organs shall be supplied in the following types and classes as specified (par. 8.1) except that the hearts shall be beef hearts only. Types Type 1 - Fresh Type 2 - Froze

GENERAL REQUIREMENTS In addition to meeting the requirements of this specification, the liver, kidney, heart and tongue shall comply with the relevant portions of the Acts and Regulations listed in par. 2.1.3 and 2.1.4 and

45、 with the requirements of the specification 32.72. The organs shall be processed and packaged under sanitary conditions in accordance with good commercial practice. They shall be delivered in good condition and shall show no evidence of deterioration at the time of delivery. The livers, kidneys, hea

46、rts and tongues shall be prepared in an establishment that is registered under the Meat Inspection Act and Regulations, and shall be delivered direct from a registered plant to the consignee. Each package and shipping container in which the organs are delivered shall bear the Agriculture Canada insp

47、ection legend. The net mass shall be tagged or stamped on each container in which the delivery is made. DETAILED REQUIREMENTS Fresh organs (Type 1) shall be chilled for not less than 12 h before delivery. They shall not be frozen at any time. Frozen organs (Type 2) shall be held at a temperature of

48、1 to 4C for not less than 12 h and not more than 48 h before freezing at a temperature not higher than -24C. They shall be stored at that temperature and delivered at a temperature of -18C or lower. Liver The liver shall be wholesome, sound, clean, well drained and free from bile stains. It shall be trimmed free from all external attachments, ragged edges and superficial appendages, including the large blood vessel and ducts lying along the liver wall.
