The CGSB has been accredited by the Standards Counc

3、il of Canada as a national standards-writin organization. The standards that it develops and o&rs as Nationaf Standards of Canada conform to the criteria and procedures established for this purpose by the Standards Council of Canada. In addition to standards it publishes as national standards, the C

4、CSB produces standards and specications to meet particular needs, in response to requests from a variety of sources in both the public and private sectors. CCSB standards and specifications, and national standards developed by the CGSB, are developed in conformance with the licies descrilmd in the P

5、olicy Manual for the Development and RI. amtename of Standards by CGSB. CCSB specifications are developed to state the particular requirements of a government or an industry for a material, a product, or a service. A specification also states the procedures to determine if the requirements have been

Unlike a CGSB standard, a CGSB specifkation may lack any one or any combination of the followin factors: broad application, committee blance, representation of & vital interests or consensus approval. CGSB specifications are sub t to review and revision at any time, so ns to ensure that they g

7、p abreast of technological progress. Suggestions for their improvement, which are always welwme, should be brought to the notice of the committee concerned. Changes to specifications are issued either as separate amendment sheets or in new editions of specifications. An uptodate listing of CGSB spec

8、ifications, including details on latest issues and amendments, and ordering instructions, will be found in the Cataiogue of Standqds and ualified Products Lists which is published annually and IS availa8e without charge upon ieqUaSt. Although the intended primary application of thii specification is

9、 stated in its Scope, it is important to note that it remains the responsibility of the users of the specilication to judge its suitability for their particular purpose. Many tests required by CGSB specifications are inherently hazardous. The CGSB neither assumes nor accepts any responsibility for a

35、these publications are shown in the Notes section. CLASSIFICATION Cottage rolls shall be supplied either sweet-pickle-cure or smoked as specified (par. 8.1). GENERAL REQUIREMENTS In addition to meeting the requirements of this specification, cottage rolls shall comply with the Acts and Regulations r

36、eferred to in par. 2.1.2 and 2.1.3 and the CGSB specification 32.72M (par. 2.1 .i). 43、ondition direct from a registered plant to the consignee. Di3AlLE REQUIREMENTS Cottage rolls shall be prepared from boneless Boston-Style Shoulder Butts (CGSB standard 32-GP-50M. Cut 407) that have been, prior to curing, completely boned to remove me blade bone and All surplus fat shall be removed,

44、leaving only an even covering of fat not more than 6 mm thick on average. The edges of fat shall be bevelled. The cottage rolls shall be rolled and tied. My ragged edges shall be removed, or the rolls shall be stuffed into approved artificial casings or elastic nettings. The cottage dls shall be cur

45、ed according to good commercial practice. Smoked cottage rolls shall be smoked and cooked to an intemal temperature of 83.C at ttie thickest point. related cartilage. The water content of the cottage rolls shall not exceed 72% when measured according to the latest applicable AOAC meaiod. PREPARATION

46、 FOR DELIVERY In addition to meeting the requirements of the CGSB specification 32.72M. mal commercial preparation for delivery shall apply, unless otherwise specified (par.8.1). The date of processing shall be given on each package and shipping container. The cottage rolls shall be supplied in the

47、specified size between 2 and 4 kg and be individually packaged (CGSB specification 32.72M). The size tolerance shall be i250 g. INSPECTION Sampllng - Sampling for inspection and testing shall be at the discretion of the inspection authority, unless a spectfic sampling plan is specified (par. 8.1). N

48、OTES Options - The following options must be specified in the application of this specification: a. Type of cottage roll (par. 3.1) b. Preparation for delivery, if other than mal commercial practice (par 6.1). c. Sampling. if a specific plan is required (par. 7.1).
