Scope1.1 This specification covers vertical electric food mixingmachines in th

Physical Requirements6.1 Design and ManufactureThe mixer shall meet thethen current applicable r
20、equirements of NSF Standard 8 andUL 763. Accessories, such as agitators, bowl trucks, bowls,tables, extensions, adapters, splash covers, and storage standsshall meet the applicable requirements of NSF Standard 2 or 8at the time of purchase. Optional accessories, component parts,assemblies, and spare
21、 parts shall be identical to the extentnecessary to insure interchangeability between mixers.6.1.1 Compliance with NSF StandardAcceptable evi-dence of the mixer meeting the requirements of NSF Standard8 shall be the NSF listing mark on the finished product andlisting in the current edition of the NS
22、F Official Listing of FoodEquipment, or a certified test report from a recognized inde-pendent testing laboratory acceptable to the user, or a certifi-cate issued by NSF under its special one time contractevaluation/certification service.6.1.2 Compliance with UL 763Acceptable evidence ofmeeting the
23、requirements of UL 763 shall be a UL Listing markon the mixer, or a certified test report from a recognizedindependent testing laboratory acceptable to the user.6.2 Drive MechanismThe mixer shall be driven by anelectric motor, through a reduction system, to the planetary/beater shaft system. The ent
24、ire drive system shall be enclosedwithin the mixer itself. All constituent active parts within thedrive system shall be replaceable. All mixers shall be equippedwith an internal clutch, shock absorber, or belt drive tominimize the shock of starting or shifting gears of the mixer.Size 60 and larger g
25、ear drive speed selection mixers shall beequipped with a shift interlock switch that will automaticallydisconnect power to the main drive motor if the operatorattempts to shift speeds without first shutting off the motor.6.3 Speed SelectorA speed selector shall be provided tochange agitator speed. E
26、ither continuously variable or discretespeed selection is acceptable. A means to provide the user withreference marks for speed repeatability is required. In no caseshall less than three distinct speeds be available on gear boxequipped mixers or three distinct markings be available oncontinuously va
27、riable transmissions.6.4 Beater ShaftThe beater shaft shall be verticallymounted and shall be held securely in place. Agitators shall fitsecurely and shall be capable of being removed or replacedwithout tools. The beater shaft shall be connected to planetarygearing to provide two separate rotating m
28、otions of the agitatorsimultaneously.6.5 Motor(s)Minimum horsepower rating for the maindrive motor of the mixer shall meet the requirements of 4.1.1or 4.1.2, as appropriate. If an auxiliary motor is used to performanother function (such as, bowl lifts), it shall be internallyinterconnected within th
29、e mixer to provide a single electricalpoint connection. Size 5 through 30 mixers shall be availablefor operation on a 120/60/1 line. Size 60 and larger mixers shallbe available for operation on a 208/60/3 line. Other voltageavailabilities are at the discretion of the manufacturer. Mixerswith three p
30、hase motors shall be provided with a plate, label, ordecal showing the direction of rotation. In all cases, the maindrive motor shall be rated for continuous duty.6.6 Power SupplyThe mixer may either be provided witha power supply cord or designed for permanent electricalconnection. Power supply cor
31、ds shall be a minimum 5-ft lengthand provided with a grounding type attachment plug. Mixerhousings designed for permanent electrical connection shall beprovided with an appropriate hole sized for conduit connection.6.7 Electrical SpecificationsNominal electrical specifica-tions are as follows: 120/6
32、0/1, 208/60/1, 240/60/1, 208/60/3,240/60/3, and 480/60/3.6.8 Mixing BowlsBowls shall meet the requirements ofNSF Standard 8 or NSF Criteria C-2. Bowl requirementsshould be stated in the purchasing document. The bowl shall beequipped with two handles. If the bowl is metallic, theminimum wall thicknes
33、s for bowls of 60-qt capacity or less is0.0625 in. For bowls of larger than 60-qt capacity, theminimum metallic thickness is 0.0781 in. The minimumF952032thickness at any point of the bowl after forming shall be no lessthan 0.050 in. for bowls of 60 qt or less capacity and not lessthan 0.062 in. for
34、 bowls over 60-qt capacity. All bowls shall beequipped with a durable metallic means of attachment to thebowl yoke. Bowls of 60-qt capacity or greater shall bereinforced at the points of attachment to the bowl yoke. Bowlsof nonmetallic construction shall have equivalent durability tometallic bowls.
35、Acceptable metal bowls will be either tin-plated carbon steel or stainless steel.6.9 AgitatorsMixers meeting this specification must beavailable with batter beater, sweet dough beater, dough hook,pastry knife, wing whip, and wire whip suitable for use withthe bowl size(s) specified. Stainless steel
36、must be used on thewires of whips.6.10 Bowl LiftThe mixer shall be provided with a mecha-nism for raising and lowering the bowl. Mixers of 80-qtcapacity or more shall be equipped with a powered bowl lift ifspecified in the purchase document. Size 60 and smaller mixersshall have a manually operated l
37、ift mechanism with a positivestop at the extremities of the travel. In all cases, a stop shall beprovided to prevent the agitator from contacting the bowl whenproper bowls and agitators are used together.6.11 Bowl SupportThe bowl support shall have three lugpositions matching lugs on the bowl. All m
38、ixers shall have apositive bowl locking mechanism to prevent bowl motionunder heavy loads.6.12 BaseThe base shall be constructed of materials thatare consistent with the need for rigidity and durability. For Size12 and larger machines, means shall be provided for bolting themixer to a stand (Type I)
39、 or to the floor (Type II).6.13 TimerSize 60 and larger mixers shall be providedwith a 15-min timer. The timer shall stop the mixer drive motorupon operating for the preset time. The timer or mixer designshall include an override position to permit continuous opera-tion. Mixers less than size 60 sha
40、ll be available with anoptional timer to provide the functions stated above.6.14 Attachment HubSize 60 and smaller mixers shall beprovided with an attachment hub for operating vegetable andcheese slicing, meat chopping, dicing, or equivalent attach-ments. This attachment hub shall be capable of at l
41、east 350rpm. This requirement can be met by the manufacturer with anancillary speed increaser attachment of aluminum construction.6.15 Bowl TruckType II mixers shall have optionallyavailable a bowl truck whose use is compatible with the basedesign of the mixer. The bowl truck shall be durably con-st
42、ructed and designed to hold the bowl above the point ofattachment to the bowl support when the support is at its lowestposition.6.16 Other Optional Equipment:6.16.1 Mixing Bowl ExtensionShall be optionally avail-able for size 60 and 80 mixers and made of the same materialas the bowl.6.16.2 Colander
43、and Sieve SetShall be optionally avail-able for size 20 and 30 mixers.6.16.3 Bowl AdaptersSize 20 and larger mixers shall beoptionally available with bowl adapters to use the next smallersize bowl and agitators.6.16.4 Splash CoversShall be optionally available for size60 and larger mixers.6.16.5 Tab
44、leShall be optionally available for Type I, Size20. When specified, the table shall be 24 in. high with ahorizontal surface of 30 by 24 in. A full-size shelf under the topsurface shall be provided for ancillary equipment storage. Itshall be of stainless steel construction, able to support a load of2
45、50 lb.6.17 LubricationAll wearing parts of the mixer shall beprovided with a means for lubrication or be permanentlylubricated and sealed. Oil seals shall contain the lubricant. Gearhousings shall have provisions for lubrication and shall allowlubricant to circulate around gears if applicable.6.18 F
46、inishingAll exterior surfaces of the mixer andattachments described within this specification shall be finishedto the requirements of NSF Standard 8. All sand cast parts shallbe ground smooth and, if manufactured of corroding materials,painted, or otherwise finished with a noncorroding treatment.6.1
47、9 WorkmanshipAll components and assemblies of themixer shall be free of dirt and other extraneous materials, burrs,slivers, tool and grind marks, dents, and cracks. Castings,molded parts, and stampings shall be free of voids, sand pits,blow holes, and sprues. External surfaces shall be free of sharp
48、edges and corners. All sheet metals used in the fabrication ofthe mixing machine shall be free from kinks and unspecifieddents. Forming and welding shall not cause damage to themetal and shall be done neatly and accurately. Corners shall besquare and true and all bends of a major nature shall be ofu
49、niform size and shape.6.20 Hazard Protection:6.20.1 The mixer shall meet the requirements of UL 763.6.20.2 Switch GuardThe ON/OFF control shall beguarded or fabricated in such a manner as to prevent unplannedactivation.6.20.3 Controls LocationThe controls for the mixer shallbe located such that they are easily visible and easily manipu-lated by the operator when standing in a comfortable operatingposition.6.20.4 Mixer GuardA barrier over the bowl area of themixer may be provided. The barrier may be solid or con-structed of a welded grid made of
