Scope1.1 This specification covers vertical electric food mixingmachines in th

Ordering Information5.1 Purchasers should select the mixer and any preferredoptions and include the following information in the purchas-ing document:5.1.1 Title, number, and date of this spe
19、cification,5.1.2 Type, size, and class of mixer required (see 4.1),5.1.3 Electrical power supply characteristics; voltage,phase, frequency (see 6.5 and 6.7),5.1.4 Bowls, agitators, accessory equipment, options, mixerguard, spare parts, and maintenance parts required,5.1.5 Labeling requirements (if d

When specified, a copy of the testresults shall be furnished.6. Physical Requirements6.1 Design and ManufactureThe
22、mixer shall meet thethen current applicable requirements of NSF/ANSI No. 8 andANSI/UL 763. Accessories, such as agitators, bowl trucks,bowls, tables, extensions, adapters, splash covers, and storagestands shall meet the applicable requirements of NSF/ANSINo. 2 or NSF/ANSI No. 8 at the time of purcha

Optionalaccessories, component parts, assemblies, and spare parts shallbe identical to the extent necessary to insure interchangeabilitybetween mixers.6.1.1 Compliance with NSF/ANSI No. 8Acceptable evi-dence of the mixer meeting the requirements of NSF/ANSI No.8 shall be the NSF listing mark on
24、the finished product andlisting in the current edition of the NSF Official Listing of FoodEquipment, or a certified test report from a recognized inde-pendent testing laboratory acceptable to the user, or a certifi-cate issued by NSF under its special one time contractevaluation/certification servic
25、e.6.1.2 Compliance with ANSI/UL 763Acceptable evidenceof meeting the requirements of ANSI/UL 763 shall be a ULListing mark on the mixer, or a certified test report from arecognized independent testing laboratory acceptable to theuser.6.2 Drive MechanismThe mixer shall be driven by anelectric motor,
26、through a reduction system, to the planetary/beater shaft system. The entire drive system shall be enclosedwithin the mixer itself. All constituent active parts within thedrive system shall be replaceable. All mixers shall be equippedwith an internal clutch, shock absorber, or belt drive tominimize
27、the shock of starting or shifting gears of the mixer.Size 60 and larger gear drive speed selection mixers shall eitherbe equipped with a shift interlock switch that will automati-cally disconnect power to the main drive motor if the operatorattempts to shift speeds without first shutting off the mot
28、or orbe designed to permit speed changes during operation.6.3 Speed SelectorA speed selector shall be provided tochange agitator speed. Either continuously variable or discretespeed selection is acceptable. A means to provide the user withreference marks for speed repeatability is required. In no ca
29、seshall less than three distinct speeds be available on gear boxequipped mixers or three distinct markings be available oncontinuously variable transmissions.6.4 Beater ShaftThe beater shaft shall be verticallymounted and shall be held securely in place. Agitators shall fitsecurely and shall be capa
30、ble of being removed or replacedwithout tools. The beater shaft shall be connected to planetarygearing to provide two separate rotating motions of the agitatorsimultaneously.6.5 Motor(s)Minimum horsepower rating for the maindrive motor of the mixer shall meet the requirements of 4.1.1or 4.1.2, as ap
31、propriate. If an auxiliary motor is used to performanother function (such as, bowl lifts), it shall be internallyinterconnected within the mixer to provide a single electricalpoint connection. Size 5 through 30 mixers shall be availablefor operation on a 120/60/1 line. Size 60 and larger mixers shal
32、lbe available for operation on a 208/60/3 line. Other voltageavailabilities are at the discretion of the manufacturer. Mixerswith three phase motors shall be provided with a plate, label, ordecal showing the direction of rotation. In all cases, the maindrive motor shall be rated for continuous duty.
33、6.6 Power SupplyThe mixer may either be provided witha power supply cord or designed for permanent electricalconnection. Power supply cords shall be a minimum 5-ft lengthand provided with a grounding type attachment plug. MixerF952082housings designed for permanent electrical connection shall beprov
34、ided with an appropriate hole sized for conduit connection.6.7 Electrical SpecificationsNominal electrical specifica-tions are as follows: 120/60/1, 208/60/1, 240/60/1, 208/60/3,240/60/3, and 480/60/3.6.8 Mixing BowlsBowls shall meet the requirements ofNSF/ANSI No. 8. Bowl requirements should be sta
35、ted in thepurchasing document. The bowl shall be equipped with twohandles. If the bowl is metallic, the minimum wall thicknessfor bowls of 60-qt capacity or less is 0.0625 in. For bowls oflarger than 60-qt capacity, the minimum metallic thickness is0.0781 in. The minimum thickness at any point of th
36、e bowlafter forming shall be no less than 0.050 in. for bowls of 60 qtor less capacity and not less than 0.062 in. for bowls over 60-qtcapacity. All bowls shall be equipped with a durable metallicmeans of attachment to the bowl yoke. Bowls of 60-qt capacityor greater shall be reinforced at the point
37、s of attachment to thebowl yoke. Bowls of nonmetallic construction shall haveequivalent durability to metallic bowls. Acceptable metalbowls will be either tin-plated carbon steel or stainless steel.6.9 AgitatorsMixers meeting this specification must beavailable with batter beater, sweet dough beater
38、, dough hook,pastry knife, wing whip, and wire whip suitable for use withthe bowl size(s) specified. Stainless steel must be used on thewires of whips.6.10 Bowl LiftThe mixer shall be provided with a mecha-nism for raising and lowering the bowl. Mixers of 80-qtcapacity or more shall be equipped with
39、 a powered bowl lift ifspecified in the purchase document. Size 60 and smaller mixersshall have a manually operated lift mechanism with a positivestop at the extremities of the travel. In all cases, a stop shall beprovided to prevent the agitator from contacting the bowl whenproper bowls and agitato
40、rs are used together.6.11 Bowl SupportThe bowl support shall have three lugpositions matching lugs on the bowl. All mixers shall have apositive bowl locking mechanism to prevent bowl motionunder heavy loads.6.12 BaseThe base shall be constructed of materials thatare consistent with the need for rigi
41、dity and durability. For Size12 and larger machines, means shall be provided for bolting themixer to a stand (Type I) or to the floor (Type II).6.13 TimerSize 60 and larger mixers shall be providedwith a 15-min timer. The timer shall stop the mixer drive motorupon operating for the preset time. The
42、timer or mixer designshall include an override position to permit continuous opera-tion. Mixers less than size 60 shall be available with anoptional timer to provide the functions stated above.6.14 Attachment HubSize 60 and smaller mixers shall beprovided with an attachment hub for operating vegetab
43、le andcheese slicing, meat chopping, dicing, or equivalent attach-ments. This attachment hub shall be capable of at least 350rpm. This requirement can be met by the manufacturer with anancillary speed increaser attachment of aluminum construction.6.15 Bowl TruckType II mixers shall have optionallyav
44、ailable a bowl truck whose use is compatible with the basedesign of the mixer. The bowl truck shall be durably con-structed and designed to hold the bowl above the point ofattachment to the bowl support when the support is at its lowestposition.6.16 Other Optional Equipment:6.16.1 Mixing Bowl Extens
45、ionShall be optionally avail-able for size 60 and 80 mixers and made of the same materialas the bowl.6.16.2 Bowl AdaptersSize 20 and larger mixers shall beoptionally available with bowl adapters to use the next smallersize bowl and agitators.6.16.3 Splash CoversShall be optionally available for size
46、60 and larger mixers.6.16.4 TableShall be optionally available for Type I, Size20. When specified, the table shall be 24 in. high with ahorizontal surface of 30 by 24 in.Afull-size shelf under the topsurface shall be provided for ancillary equipment storage. Itshall be of stainless steel constructio
47、n, able to support a load of250 lb.6.17 LubricationAll wearing parts of the mixer shall beprovided with a means for lubrication or be permanentlylubricated and sealed. Oil seals shall contain the lubricant. Gearhousings shall have provisions for lubrication and shall allowlubricant to circulate arou
48、nd gears if applicable.6.18 FinishingAll exterior surfaces of the mixer andattachments described within this specification shall be finishedto the requirements of NSF/ANSI No. 8. All sand cast partsshall be ground smooth and, if manufactured of corrodingmaterials, painted, or otherwise finished with
49、 a noncorrodingtreatment.6.19 WorkmanshipAll components and assemblies of themixer shall be free of dirt and other extraneous materials, burrs,slivers, tool and grind marks, dents, and cracks. Castings,molded parts, and stampings shall be free of voids, sand pits,blow holes, and sprues. External surfaces shall be free of sharpedges and corners. All sheet metals used in the fabrication ofthe mixing machine shall be free from kinks and unspecifieddents. Forming and welding shall not cause damage to themetal and shall be done neatly and accuratel
