Physical Requirements6.1 Design and M
17、anufactureThe vegetable peeler shall becomplete so that when connected to the specified source ofpower the unit can be used for its intended function. Thevegetable peeler shall meet the then current applicable require-ments of NSF/ANSI 8 and ANSI/UL 763.6.1.1 Compliance with NSF/ANSI 8Acceptable evi
18、denceof meeting the requirements of NSF/ANSI 8 shall be the NSFcertification mark on the vegetable peeler and listing in thecurrent edition of the NSF Listing of Food Equipment, acertified test report from a recognized independent testinglaboratory acceptable to the user, or a certificate issued by
19、NSFunder its one time contract evaluation/certification service;and, where applicable, ASSE 1001.6.1.2 Compliance with ANSI/UL 763Acceptable evidenceof meeting the requirements of ANSI/UL 763 shall be a ULListing Mark on the vegetable peeler, or a certified test reportfrom a recognized independent t
20、esting laboratory acceptable tothe user.6.1.3 MaterialsMaterials used in the construction of veg-etable peelers shall comply with the applicable requirements ofNSF/ANSI 8. Materials used shall be free from defects thatwould adversely affect the performance or maintainability ofindividual components
21、of the overall assembly.6.2 Cylinder or HopperThe cylinder or hopper shall besheet aluminum or stainless steel, or cast iron. Machinesintended for marine applications shall be furnished with astainless steel cylinder. The inside surface of all cylinders shallbe as described in 6.2.1-6.2.6. When sili
22、con carbide or alumi-num oxide is used, it shall cover the inside surface of thecylinder completely and uniformly. The silicon carbide oraluminum oxide shall still be intact, without looseness or barespots.6.2.1 Silicon carbide fused to the cylinder;6.2.2 Silicon carbide bonded to the cylinder with
23、a thermo-setting resin, or epoxy adhesive;6.2.3 A ribbed cylinder;6.2.4 Silicon carbide bonded to the cylinder with an asphaltcompound;6.2.5 Aluminum oxide fused to the cylinder; and6.2.6 Removable food-grade plastic cylinder liner withtextured surface.6.3 DiskThe disk shall be cast aluminum, formed
24、 stain-less steel, or reinforced plastic. Each disk shall be removablethrough the top of the cylinder. The top surface of the disk shallhave a cast-in textured surface or be covered completely anduniformly with silicon carbide or aluminum oxide.6.3.1 Machines intended for marine application shall be
25、furnished with a stainless steel or reinforced plastic disk.6.4 Vegetable OutletThe cylinder shall be provided with avegetable discharge outlet consisting of a hinged metal door ofstainless steel or aluminum, with a door latching mechanismand a stainless or aluminum vegetable guide or chute. Theheig
26、ht of the outlet on Style 2 machines shall be not less than37 in. (940 mm) and not more than 42 in. (1016 mm) above thefloor. The door shall open and close easily and shall have apositive locking action. The inside surface of the hinged metaldoor shall line up with the inside surface of the cylinder
27、 wallwhen in the closed position. The door shall be equipped with agasket or O-ring seal to prevent leakage, or there shall be atrough and drain arranged around or under the door, so that anyseeping water is returned automatically to the waste outlet ofthe cylinder.6.5 Peel TrapThe peel trap for the
28、 Style 2 machine shallbe either integral with the machine or an independent unit, andit shall consist of a covered compartment with a removablewire mesh or perforated sheet metal basket. The basket shall beconstructed of stainless steel. The Style 1 machine shall befurnished with a peel trap basket
29、for attachment to thedischarge hose. A peel trap is not required when a disposer isprovided.6.6 Waste OutletFor Style 2 machines, a threaded non-corrosive metal outlet shall be located below the level of thedisk for connection to a waste drain. The outlet shall drain thecompartment beneath the disk
30、completely. The outlet shall beat least 1.5-in. (38-mm) iron pipe size (IPS) for Size A and Bmachines and at least 2-in. (51-mm) IPS for Size C machines.6.7 Water Inlet and SprayerA noncorrosive water sprayershall be designed to spray, wash, and flush the inside of thecylinder and the vegetables dur
31、ing the peeling operation. Thesprayer shall be designed to spray through an opening in thecover, or it shall be attached permanently to the top insidecylinder wall and shall be so positioned that it does notinterfere with cylinder loading. The supply line to the sprayhead shall be at least14-in. (6.
32、35-mm) IPS or38-in. (9-mm)tube.6.8 Cylinder Covering RingThe cylinder covering ringshall be cast aluminum, spun sheet aluminum, or fiberglass-reinforced plastic. The ring shall be either readily removable orhinged to the cylinder so as not to interfere with the removal ofthe disk. The ring shall pre
33、vent water from splashing out whenthe machine is peeling vegetables. The opening in the ring shallfacilitate charging of the cylinder.6.9 Style 1, Counter MountedThe Style 1 machine shallbe equipped with provisions for counter mounting.6.10 Style 2, Floor MountedThe supporting base shall besteel, al
34、uminum, or stainless steel. The base shall provide arigid and stable support for all machine components. The baseshall be equipped with adjustable legs, with provision forbolting the legs to the floor.6.11 Disposer, WasteWhen specified (see 5.1.6), the Style2, Size B and C vegetable peeling machines
35、 shall be furnishedwith a waste disposer. The disposer housing shall be stainlesssteel, suitable for mounting to a 3.5-in. (88.9-mm) insidediameter throat opening, equipped with a UL-Listed or Rec-ognized On-Off switch. The disposer motor shall be as speci-fied in 6.12.2. A tailpiece of noncorrosive
36、 material shall beprovided for a 1.5-in. (38-mm) drain connection. The wastedisposer shall operate smoothly, disposing of potato peelingswithout leakage.F 1371 04 (2009)26.12 Electrical Devices:6.12.1 Electrical SpecificationsNominal electrical speci-fications are: 120/60/1, 208/60/1, 240/60/1, 208/
37、60/3, 240/60/3, and 480/60/3.6.12.2 MotorsMotors shall meet the requirements ofANSI/UL 763. The peeler motor, and, if equipped, disposermotor, shall be of the continuous duty type. The motor shall benot less than13 ,34 , and 1 hp (248, 559, and 746 W) for SizesA, B, and C machines, respectively. The
38、 disposer shall be12 hp(373 W) minimum, 115 V, 60 Hz, and 1 phase.6.12.3 WiringThe machine shall be completely wired.When specified (see 5.1.5), a power supply cord shall befurnished.6.12.4 TimerWhen specified (see 5.1.3), the vegetablepeeling machine shall be provided with a timer. The timer shallb
39、e adjustable in increments from 15 s up to at least 4 min, withthe increments marked permanently on a timer dial.6.12.5 SwitchThe switch and wiring shall be located forconvenient use, and shall not be exposed to water splashage.6.13 Piping, Tubing, Fittings, and Valves (Installation)Connections shal
40、l be readily accessible to facilitate installationand maintenance. Whenever possible, piping, tubing, andvalves shall be located on the exterior of the machine.6.13.1 Piping and FittingsWater fittings shall be ofcorrosion-resisting material. Fresh water supply to the hoppershall be discharged not lo
41、wer than 1 in. (25.4 mm) above themaximum flood level rim, or an effective air gap or vacuumbreaker shall be installed to prevent backflow. Backflowprotection shall be in accordance with ASSE 1001. The drainand other plumbing connections shall be standard pipe ortubing connections. Drainage piping s
42、hall be either corrosion-resisting material or suitable heat-resisting plastic tubing withfittings.6.13.2 ValvesValves shall be of corrosion-resisting mate-rial. When specified, a separately packed service supply valveshall be provided for closing the supply of water (see 5.1.8).7. Hazard Protection
43、7.1 The peeler shall meet the requirements ofANSI/UL763.7.2 Switch GuardThe on/off switch shall be guarded, orbe designed in such a manner to prevent unplanned activation.8. Performance Requirements8.1 Performance Standards ComplianceWhen tested inaccordance with Section 9, with the cylinder or hopp
44、er filled torated capacity, and within a period of 3 or 4 min, or one cycleof the timer (if equipped), potatoes shall be considered peeledsatisfactorily when all of the outer and under skins, except theeyes and the skin on low spots, have been removed. At ratedcapacity, the machine shall be capable
45、of peeling all sizes ofnew and old potatoes conforming to U.S. Grade No. 1 withoutflats and without greater than 15 % weight loss. Vegetablepeeling machines shall not leak when tested in accordance withSection 9. The motor shall be capable of starting with a fullcylinder or hopper and accelerating t
46、o rated speed. Vegetablepeeling machines shall conform to the requirements ofANSI/UL 763 and NSF/ANSI 8.9. Test Methods9.1 Operational TestTest each peeler for operation inaccordance with the manufacturers operating instructions.9.2 Using the manufacturers recommended quantity, loadthe vegetable pee
47、ling machine with clean, unpeeled potatoes.Desired peel quality shall be achieved with 4 min or onecomplete timer cycle. The machine drain system and outletshall drain the compartment beneath the disk without leakageof waste water or peelings.10. Sampling10.1 When specified in the contract or purcha
48、se order,sampling for inspection shall be performed in accordance withANSI Z1.4, which will supersede implied sampling require-ments stated elsewhere in this specification.11. Inspection11.1 End-Item TestingWhen specified in the contract orpurchase order, one production item, selected at random from
49、each lot, shall be tested by the manufacturer in accordance withthe applicable subsections of Section 9. Performance resultsshall be recorded in a permanent file and the information shallbe available to the customer upon demand. Any subsequentchange in design that would relate to performance shall requirea new test record.11.2 Quality Conformance InspectionThe manufacturershall have an effective quality audit inspection.11.3 Component and Material InspectionIncoming com-ponents and materials shall be inspected by the manufacturer tothe desig
